U of I Aims For Salsa Serving Record

The University of Illinois is adding some spice to the start of school.

The News-Gazette reports the school will try to set a world record this week for the largest single-serving of salsa during Friday's convocation ceremony.

Housing staff will prepare 7,500 pounds of salsa Friday.

Their recipe includes 3.5 tons of tomatoes, 600 pounds of onions, 20 pounds of jalapeo peppers, 375 bunches of cilantro and 70 gallons of lime juice. 

Everything except the juice is being sourced from nearby farms, including the U of I's own Student Sustainable Farm. It'll be served in dining halls.

World record attempts have become a tradition at the start of school. In 2011, the school created the world's largest smoothie and set a record last year for the most people simultaneously shucking corn.
